Much like the city itself, my thoughts on Córdoba are centred around the Mosque. This is a focal point for the entire Andalusia region, and (for me) more impressive than Alhambra of Granada. But let us start with the food.

One dish we adored was salmorejo. Basically a variation on gazpacho, this cold soup makes use of ripe tomatoes and oil from the olives that grow around the south of Spain. They are blended, along with stale bread, garlic and topped with some chopped egg and jamon. This, along with tinto verano (“wine of summer”), I have brought back to Australia as a delicious export. Such dishes complement the climate perfectly, and sum up the tendency of European food to contain purely locally-found ingredients. Given Australia’s mishmash of cultures and cuisines, it is forgivable that we utilise far-flung produce, but we continued to thrill at eating a meal made up of things that can be found within walking distance.

Another example of this is the incredible Rabo de Toro (“bull’s tail”). A more hugely flavoured dish you would struggle to find…a kind of osso bucco, this is a dish that developed from the region’s strong bullfighting culture.
